Green tea is another type of tea made from the leaves and buds of the Camellia Sinensis used to make black tea. Most people have heard about it but don’t understand the difference between simply black tea and green tea. This article will explain simply the difference between black tea and green tea.
In the case of black tea, raw tea leaves are subjected to the first withering process. The leaves are then put into the rolling process. The oxidation process begins from the beginning of the rolling process. Here, polyphenol reacts with oxygen. The enzyme required for the oxidation process Polyphenol Oxidase.
In the production of green tea, the entire fresh leaves are released to a high temperature. It prevents the activation of the polyphenol oxidase enzyme present in the leaf. Green tea, like black tea, does not undergo fermentation. Green Tea is Unfermented because of it Green color is remain in the green tea.
The two main types of green tea production are as follows
1 Pan Fired-Chinese Green Teas
The Chinese method of green tea is heated by using, pan or mechanical rotating drum to avoid the polyphenol oxidase activation. Chinese green tea-making method can be fired more than once. The taste may vary depending on the number of firing. Generally fried Chinese green tea has a yellowish-green or dark green color and flavor. Some well-known paned Chinese green tea types are Gunpowder and Dragonwell.
2 Steamed- Japanese Green Teas
The Japanese method of green tea is heated by using steam to avoid the polyphenol oxidase activation. This process produces a unique flavor and aroma to Japanese-style green tea. Some well-known steamed Japanese green tea types are Sencha,Hojicha, Sencha, Genmaicha, Gyokoro and Matcha.
